Easy Eggs Over Easy

Ever wonder how those short order cooks at the diner always serve up perfect eggs ‘over easy’? It’s not their flipping skills. The secret is to add a few drops of water to the pan when the eggs are just about done, then quickly put the lid on the pan. After about thirty seconds of steaming the eggs, you will have eggs over easy. Just slide the eggs onto your plate. No flipping required. Easy!
