Cleaning clams and mussels

Bivalves hate cornmeal. I hate grit. So to get rid of the grit I soak my mine in a bed of cornmeal in cold water for at least half an hour.

Also, I am careful to remove them from their nice little bed one at a time so that they can not reabsorb the grit they just spit out.
