Simple syrup

Simple syrup is as simple as it’s name. Simply speaking it is sugar dissolved in water.

To prepare, combine two parts sugar to one part water in a saucepan. Stir over a low heat until the sugar dissolves and you’re left with a thick, clear fluid.

You can make this in advance and leave it in the refrigerator for up to three months. This ready to go sweetener is excellent for everything from ice cream to ice tea. It’s particularly useful when mixing cocktails.
