Mirepoix

Mirepoix is the French term for a combination of onions, carrots and celery. Sometimes ham or bacon is added. Other ingredients such as leeks, parsnips, garlic, tomatoes, shallots, mushrooms, peppers and chilies to name a few can be added or substituted.

The purpose of a mirepoix is to add a subtle aromatic flavor to soups and others dishes.
